The Perfect Coconut Rice

I love rice!  For a while I stopped eating it when I was exploring different diets, such as the SCD and Paleo.  Luckily, rice (white rice in particular) agrees with me so I eat it often.  My friend Eileen from Phoenix Helix has a great post all about white rice.  It’s worth the read to gain more information about how rice interacts with the body.  Something important I always do when preparing rice is soak and rinse.  This is especially important when preparing brown rice because it helps leach out the arsenic that occurs naturally in all rice, but in higher amounts in brown.

According to a 2012 report on the arsenic level in rice, brown rice contains 80 percent more inorganic arsenic on average than white rice.  It’s suggested that the arsenic accumulates in the outer layer of the grain (which is removed for white rice). 

But don’t let the arsenic scare you too much.  If you’re worried about it, soak and rinse your brown rice or just eat white rice.  Either way, rice is super yummy and when prepared correctly, it can be super good for you. It’s such a treat.  I want to share with you one of my favorite ways to prepare white rice.  I make this recipe several times a week for my family and everyone LOVES it.  Enjoy!

The Perfect Coconut Rice

Ingredients
  • 2 cups long grain white rice
  • 3 cups filtered water
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
Instructions
  1. Add the 2 cups of soaked and rinsed rice to a large sauce pan and add the 3 cups of water.
  2. Too the rice add 2 tablespoons of coconut oil and ½ teaspoon of salt.
  3. Bring the rice to a boil and stir the contents around a bit.
  4. Turn the heat to low and allow the rice to come to a gentle simmer (this helps the boil over that often occurs).
  5. Place a lid on the rice let cook on low for 15 minutes.
  6. After 15 minutes, remove the pot from the heat, keeping the lid on, and allow the rice to rest for an additional 10 minutes (this part allows the rice to keep cooking and prevents burning).
  7. After 10 minutes, remove the lid and serve rice. It will appear sticky at first, but as it cooks it will become fluffy.
Notes
How to soak and rinse rice: Place the 2 cups of rice in a large bowl and cover with water. Soak the rice for about an hour, changing the water at least twice. I like to rub the rice around with my hands. When you do this, you will see the water become cloudy. My goal is to soak the rice until the water is mostly clear. After you soak the rice for an hour, rinse the rice under running water again and again, again aiming for the water to run clear.
