Amber, it was nice to see some good recipes from last week. This week I have Mango Chicken Stir fry which is gluten free and dairy free. The fish sauce I have used is also gluten free which is a P.F Chang product.

I shared my recipe for Apricot Oat Crunchies. This recipe is gluten free, but can be made using “regular” flour if you don’t have issues with gluten. These cookies are pretty healthy because they contain dried apricots, dried coconut, oatmeal and cornflakes. I will be making them again soon using liquid stevia and coconut sugar instead of regular sugar.

I can tell these are super good! We must be on the same wavelength. I’m also working on an apricot oatmeal recipe (I’m trying to copycat a store bought granola bar that my husband loves). Hi Amber! Thanks for hosting. I’m #97 this week – Bean Salad…in a hurry. I like to use dry/cooked beans instead of canned beans in this recipe, but either can be used. This is a great little side salad that can be made quickly and adjusted to suit what you have in your pantry or what you like. Enjoy!
