Monthly Round-Up: May 2012 (Raw Foods)

I’m a huge fan of raw food.  I can think of nothing better or more nourishing for our bodies.  But as much as I love raw food, I need to be very careful with eating it, as it can quickly upset my sensitive digestion.  Some days are better than others.  I would say, overall,  my diet consists of about 40% raw food.  Despite my sensitives, raw food makes its way to our table – always!  From the beginning our children were exposed to and encouraged to eat raw food.  And they are surprising enthusiastic about it.  We do a lot of gardening, so they love nothing more than picking a snap pea, pepper, or tomato and eating it up.  I offer veggies raw during snacks (carrots, peppers, snap peas, cucumbers, zucchini, etc), and often provide a raw appetizer before dinner.  Salads always make an appearance, whether in the form of green, fruit, or veggie.
So in celebration of summer and the inescapable hot days ahead, please enjoy this nourishing round-up of raw recipes.
