Vanilla Bean Coconut Ice Cream with Caramel Sauce

-2 cans coconut milk
-1/3 cup grade B maple syrup
-3 dates, pitted and soak for 2 hours
-2 fresh vanilla beans
-1 teaspoon vanilla

Caramel Sauce
-6 dates, soaked in filtered water for 6-8 hours, reserve date water
-1 tablespoon honey*
-1 teaspoon vanilla
-1/2 to 3/4 cup reserved date water
