I’ve never actually made any “knock off” cookies GS cookies before, but this post just totally inspired me. It’s unfortunate how unhealthy those GS cookies are! They can certainly be made healthier – sort of a sad way for that organization to make money. My younger sister was in girl scouts and I remember the loads of cookies we used to have in the house. I always loved the coconut ones…and thin mints of course. I like the idea of making them at home with better ingredients. And I LOVE that soup you shared too, Shirley.
