The Perfect Coconut Rice
  • 2 cups long grain white rice
  • 3 cups filtered water
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
  1. Add the 2 cups of soaked and rinsed rice to a large sauce pan and add the 3 cups of water.
  2. Too the rice add 2 tablespoons of coconut oil and ½ teaspoon of salt.
  3. Bring the rice to a boil and stir the contents around a bit.
  4. Turn the heat to low and allow the rice to come to a gentle simmer (this helps the boil over that often occurs).
  5. Place a lid on the rice let cook on low for 15 minutes.
  6. After 15 minutes, remove the pot from the heat, keeping the lid on, and allow the rice to rest for an additional 10 minutes (this part allows the rice to keep cooking and prevents burning).
  7. After 10 minutes, remove the lid and serve rice. It will appear sticky at first, but as it cooks it will become fluffy.
How to soak and rinse rice: Place the 2 cups of rice in a large bowl and cover with water. Soak the rice for about an hour, changing the water at least twice. I like to rub the rice around with my hands. When you do this, you will see the water become cloudy. My goal is to soak the rice until the water is mostly clear. After you soak the rice for an hour, rinse the rice under running water again and again, again aiming for the water to run clear.
