Monthly Round-Up: March 2012

Hello friends.  Geez, where did March go?  
Here we are again for another monthly round-up.
I don't know about you, but I spend A LOT of time searching for dinner ideas - far more than anything else.  So this month I put together a nice variety of ideas ranging from meat based to vegan.  Scott and I were vegetarians for years (before my Crohn's diagnosis) so I appreciate vegetarian and vegan meals.  Currently, we eat meat-base dinners about 3 nights per week and the other nights are a mix of vegetarian and vegan, sprinkled with raw dishes.  Here's to a fabulous April full of good eats and good health

  1. Awww! Thank you for picking my Nut Roast Amber! Did you go back to eating meat because of your Crohn's or was that just a life style choice? My son has had 100 per cent success with the SCD and he's been vegetarian all his life!

      Absolutely! Your nut roast is so creative and awesome as a main dish for SCD!

      So yes, eating meat again was a choice. After my Crohn's diagnosis I immediately eliminated so many foods from my diet (dairy, sugar, wheat, soy) and was so overwhelmed (and confused, young, and trying to do it on my own with what I could find on the subject). I also immediately started a month long (100% no carb/sugar) candida cleanse and then ate an anti-candida diet until I got pregnant (so about a year). Meat was one of the few foods I could eat. I now enjoy eating chicken, turkey and pork. I don't eat red meat (or support the beef industry for personal and political reasons). One day I may eliminate meat again because I like the idea of a plant based diet, but I'm still getting familiar with SCD and creating recipes to keep up with my VERY speedy metabolism.

      Your son is so inspiring to me. I'm thrilled he is thriving and doing well. And you're such a superstar mom, Vicky! I greatly admire you and your dedicated to SCD, health and healing! Your vegetarian recipes are so awesome!!

    • Amber, my son's success is all down to him in the end - he's the one who has stuck to the diet and for half the time, he was away at university. I don't know if this is a clue to success but he has eaten very plain foods. Luckily for him he can eat nuts and veggies! He lives on green soups, carrots (lots of them), other red fruits and veggies, apples, bananas, dried fruit and nuts and poached eggs. One of the reasons I cook quite plain and simple food for the SCD is because he thrived on it.

      The reason I am vegetarian is because I ate a vegetarian diet at University (because a friend was veggie)and meat made me sick when I tried to eat it again, that's all. But we brought the children up as vegetarian and they have all decided to remain on the diet.

      I think when you have a terrible disease such as Crohn's disease you should eat what works for you and if you feel well with your diet then stick with it.

    • Agreed Vicky! One must do what works best. We all have such individual needs and responses to food. I am approaching the SCD 100% dairy free. I see a lot of dairy in there, so I am working around this. Dairy just makes me so sick. My body changed for the better in so many ways when I gave it up 8 years ago! And I'll never go back.

      I'm just really impressed with your son's dedication to health, and it's obvious you planted the seed of good choices and how this relates to good health. I'm thinking back to undergrad and graduate school and I lived on Top Ramen and canned refried beans (and a ton of cheese and gluten). But I wasn't diagnosed yet. It was so life changing, not only the diagnosis, but the information about diet, food and my body...things I knew absolutely nothing about.

      Well this dish is delicious! I've made it twice. LOVE IT. We don't eat a lot of fish, as the fish we buy is expensive (wild caught, eco-friendly and eco- supported fish). But I have to tell you - DELICIOUS! I've also used a homemade teriyaki sauce on salmon that's pretty darn good. But I'm such a mustard girl!!
