Roasted Cauliflower Curry Soup (SCD/Paleo Friendly)

I've come across many cauliflower soup recipes over the years but never made my own...until last month that is.  It's such a delightful soup with a buttery, delicate flavor.  I kick myself for waiting so long.  This is super spring dish, light yet filling, and would probably taste fantastic cold on those hot summer days. My friend Vicky has a wonderful SCD Lentil Cauliflower soup - I love her addition of lentils - so clever.
Salud friends.
5 Health Benefits of Cauliflower

Ingredients
-1 yellow onion, chopped
-1 cup carrots, chopped
-1 cup zucchini, chopped
-2 lbs. cauliflower (2 medium heads)
-4 cups filtered water
-1 can of SCD legal coconut milk
-2 teaspoons green curry paste (or more to taste)
-1/2 teaspoon ground turmeric
-1 teaspoon garlic granules (or 2 fresh cloves, minced)
-1 teaspoon salt
-Oil of choice

How To
Preheat oven to 400
1.  Cut and wash cauliflower.  Toss with a drizzle of oil and garlic granules (or whatever you roast with).  I use garlic granules in place of salt.  Roast cauliflower for 25 minutes, or until slightly browned.
2.  In a pot, on medium heat, add some oil with onions and salt.  Sauté until slightly wilted.  Add in carrots, zucchini, curry paste, turmeric, garlic grans and sauté for a few minutes.
3.  Add coconut milk, mix.
4.  Add in roasted cauliflower and water.
5.  Bring to a boil and turn down to a simmer for about 20 minutes (or until fork tender) then turn off heat and allow to sit for about 10 minutes, then blend with immersion blender (or blender of choice).
6.  Garnish with oil and fresh ground pepper.

Notes:
*You don't have to roast the cauliflower.  I've made it without roasting, but the roasting adds so much flavor.  So if using raw cauliflower, simmer for about 40 minutes, or until fork tender. Rest, then blend.
*Green Curry Paste is a legal.  Please see HERE for a list of ingredients.  And according to THIS site, turmeric is a SCD legal spice.

  1. How much coconut milk? You don't have it listed in the ingredients.

    Thanks

How fab. This would use up a lot of vegetables and get me out of a bind when my next veggie order is on its way yet there's not that much room in the fridge. Thanks for coming by and sharing it at Whole Food Wednesdays.

Yum- looks delish! Love the addition of the green curry- I have been making mine with a little more of my homemade curry spice, but should switch it up.

    Thanks for sharing!

  • This looks terrific. Can't wait to try it. I've got a cauliflower in the fridge right now but it's earmarked for another dish. The next cauliflower is already designated for your yummy soup.

  • Word of warning: Those on the SCD can't have that green curry paste or the turmeric, which is a starch. :(

    1. Not necessarily.

The green curry past does NOT contain anything illegal. See here: http://www.amazon.com/Thai-Kitchen-Green-Curry-4-Ounce/dp/B003VYH8AM (the ingredients are as follows: Green Chili, Garlic, Lemongrass, Galangal (Thai Ginger), Salt, Onion, Pepper, Coriander, Cumin, Kaffir Lime). All legal.

And Turmeric is an excellent anti-inflammatory. And according to this link, it's a legal spice: http://www.austinscdfriends.com/articles/article/3691416/53827.htm
