      You are hilarious! I sent this post to my husband (due to the Jedi reference). And you are so right my friend. A little trickery (illusion) in the kitchen is necessary from time to time. I love this idea. So simple, so practical. :-)

    • Drool! Vicky, you know I'm a beet girl. And I just love the other ingredients you added in this salad here. It's a meal all own its own! I feel like walnuts are the forgotten nut, no? They are so super healthy. I just made some walnut milk (will be share the recipe soon) and it's so much easier for me to digest.
