Monthly Round-Up: February 2012

Even though our winter here in Northern California has felt more like spring, soups make their appearance each week on the menu.  Soups are the perfect meal - healthy, filling and easy!  As I'm typing this post I see the wind picking up and clouds moving in.  We are in for a storm tomorrow, which is a welcomed change.  We've had just a few days of rain this winter and very little snowfall in Tahoe (our nearest snow playground).  So I thought it fitting to do a round-up of soups before we officially move into spring...and for my friends out there feeling the winter chill in much colder parts of the county and world.  It will soon be searing hot here in my neck of the woods and soup will be far from my mind.  So slurp up and enjoy these comforting soups here in the final weeks of winter.  Salud.

    Thank you sweet Amber for sharing!! I honestly forgot I had that recipe posted on my blog. I haven't made it in forever because potatoes make my joints swell so much. :( It is a super yummy soup though!

    It's cold here in Alaska, 9 degrees and we have a ton of snow on the ground (we've had a record breaking snowfall this year). I am looking forward to spring!!

      I hear you! I said good-bye to white potatoes 6 months ago because they were aggravating my digestion. But I have to say, potatoes soups are a favorite. Before I was diagnosed, I made a killer leek and potato soup. I definitely wanted to share your soup with others!

      I'm jealous of your winter weather. We finally had some rain today....sooo nice. And glad to report, lots of snow in the mountains. Time to dust off the snowboards!!

    • Well Jen, my husband can't understand it, but I eat soup for breakfast - often! But I'll eat anything for breakfast, or throw some eggs on leftovers and call it good. Your zoodle soup is amazing and the use of zucchini is just brilliant for those on the SCD. Thank YOU for the great recipe friend. And I'll be sure to pass the compliment along to my daughter.

    Love warm comforting soup...and although we've had terrible weather with the threat of snow..it's just mostly slushy rain. Soup is exactly what I need as a get over my 24 bug...I will make one of these tonight! Thanks my friend, as always...you're such a good PR person!

    Thanks so much for featuring my Roasted Red Pepper Soup. We're supposed to get snow here this weekend. Perfect for trying a few of these wonderful recipes. There's nothing like watching the snow fall while sipping a cup of warm soup. I'm not ready for it to end just yet!
